Ingredients (6)

200.00 g puff pastry — defrosted
100.00 g colchester cheese — finely grated
30.00 ml fresh herbs — chopped
1.00 cherry tomatoes — punnet
salt and freshly ground black pepper

Method:

Roll out the pastry and cut out 7 cm circles with a glass. Place on a baking sheet and press a smaller circle 3/4 of the way through the pastry on the inside. Put a tablespoon of grated cheese in the centre of each pastry case and sprinkle with herbs. Cutoff the bottom end of the tomatoes and arrange 3 on each pastry. Season, drizzle with olive oil and bake for 10-15 minutes until puffed and golden brown.
Makes 8-10 tartlets.
