Ingredients (8)

50.00 ml fresh chillies — 573
1.00 onion — medium
2.00 garlic — cloves, thinly sliced
1.00 bay leaves
800.00 g red peppers — cored, seeded and sliced
450.00 g tomatoes — chopped
salt
black pepper — freshly ground

Method:

1. Heat the olive oil in a heavy-based pan, add the onion and cook over a gentle heat until the onion is golden, about 5 to 7 minutes.
2. Add the garlic and the bay leaf, continue cooking for 2 minutes, then throw in the peppers and cook for a further 10 minutes. Add the tomatoes, salt and pepper and cook, stirring occasionally, for 10 minutes. Serve hot or cold.
