Tomato jelly with crispy bacon

Ingredients (8)

1.00 tomatoes — chopped
1.00 celery stalks — chopped
15.00 ml fresh basil — shredded
45.00 ml Sheridans gelatine
1.00 lemon — juice only
Tabasco sauce — to taste
Worcestershire sauce — to taste
250.00 g streaky bacon — fried until crisp

Method:

Blend 3/4 of the tomatoes with the celery and basil in a liquidiser until smooth. Place a quarter of the mixture into a bowl and add the gelatine. Heat at a low heat in the microwave and stir frequently until gelatine has dissolved. Mix into the remaining tomato mixture and add lemon juice, Tabasco and Worcestershire sauce, to taste. Chop the remaining tomatoes and add. Pour into individual ramekins and allow to set.
Unmould and serve with crisp fried bacon and green salad.
