Tomato and chive salad

  • 250
    g
    cherry tomatoes, halved
  • 15
    ml
    chopped fresh chives
  • 75
    g
    watercress sprigs, washed
  • DRESSING
  • 15
    ml
    white wine vinegar
  • 45
    ml
    olive oil
  • 2
    ml
    wholegrain mustard
  • salt and ground black pepper
  • pinch of brown sugar
 

Method

 
1. Place the tomatoes in the base of a plastic container and top with the chives and watercress. Do not stir together at this stage. 2. Seal the top of the box and pack into a cooler box. 3. Mix together the dressing ingredients in a small plastic container, seal and pack in a food bag in case of leakages. 4. Just before serving, shake the dressing and then pour it over the salad.
