Tomato and basil salad

    firm tomatoes, peeled and sliced
  • 1
    large cucumber, sliced
  • 1
    red onion, thinly sliced
  • 125
    white vinegar
  • 15
    fresh basil, shredded


Layer the sliced tomatoes, cucumber and onion in a shallow serving dish.
Mix together the vinegar and basil.
Drizzle over the salad.
Season to taste with salt and freshly ground black pepper.
Cover and refrigerate until ready to serve.
