Ingredients (9)

40.00 ml fresh chillies — 573
250.00 g streaky bacon — rindless and diced
1.00 aubergine — cubed, salted and rinsed
3.00 garlic — cloves, crushed
425.00 g plum tomatoes
20.00 ml tomato paste
2.00 ml sugar
25.00 ml fresh basil — chopped
400.00 g pasta — spaghetti

Method:

Heat 20 ml olive oil in a saucepan and fry bacon until crisp. Remove from pan and set aside. Add remaining oil to pan and fry brinjals for 5 minutes until browned. Add garlic, tomatoes, tomato paste, sugar and herbs. Season to taste and simmer gently for 15-20 minutes. Meanwhile, cook pasta until al dente. Serve pasta topped with sauce and sprinkled with bacon. Serves 4.
