Tomato and apple salsa

    sunflower oil
  • 1
    Royal Gala apple, roughly chopped
  • 2
    tomatoes, peeled, seeded and roughly chopped
  • 1
    red onion, finely chopped
  • 60
    brown vinegar
  • 60

  • 20
    finely chopped fresh coriander
  • salt and freshly ground black pepper


about 20 minutes
Heat the oil in a pan, add the apple and stir-fry until just soft.
Add the tomatoes, onion, vinegar, water and sugar and stir-fry for another five minutes or until the tomatoes are just soft.
Remove from the heat, stir in the coriander and season with salt and pepper to taste.
Makes about 500 ml.

Serve this salsa with lamb, pork, chicken or ? best of all ? corned beef.
