Tomato and anchovy toast

    small onion, very finely chopped
  • 15
    wine vinegar
  • 60
    olive oil
  • salt
  • freshly ground black pepper

    thick slices crusty bread
  • 1
    clove garlic, peeled
  • 6
    anchovy fillets


1. Put the chopped onion in a bowl with the vinegar. Stir in half of the olive oil. Season and set aside. 2. Slice the tomatoes thickly. Sprinkle over a little salt and pepper and grill them under a preheated hot grill. Toast the bread on both sides until golden, gut the garlic in half and rub the cut side over the crisp toast. Pour the remaining olive oil over. 3. Place the grilled tomato slices on the rounds of toast, crush them slightly with a fork and put anchovy fillets on top. Drizzle the onion dressing over. Eat while hot!
