Tomato Provençal

  • 8
    small tomatoes
  • 1
    bunch basil
  • 6
    cloves garlic
  • olive oil
  • salt and black pepper
  • toast to serve


1. Remove stalks from tomatoes, quarter and chop flesh. Place in a sieve to drain. 2. Remove stalks from basil and chop leaves finely. Peel garlic and crush half of it. Finely chop remaining garlic and fry in olive oil until golden brown. 3. Mix tomato with basil, season with salt and pepper. To serve: Spread toast first with crushed garlic and then tomato mixture. Sprinkle the top with fried garlic.
