Tomato And Basil Terrine

    ripe tomatoes, sliced

    basil leaves
  • 1
    buffalo mozzarella ball, sliced
  • 500
    tomato juice
  • 3
    red wine vinegar
  • 4
    gelatine leaves, softened
  • 5
    salt and freshly ground black pepper


Layer the tomatoes, basil and cheese in a glass or non-stick loaf pan. Heat the tomato juice and vinegar in a saucepan over medium heat.

Stir in the gelatine and season. Allow to cool and pour over the tomatoes. Chill until set. Unmould and slice.
