Ingredients (10)

800.00 ml water
2.00 chicken breast fillets
3.00 garlic — cloves, crushed
1.00 dried chilli — crushed
6.00 spring onions
4.00 lime leaves
2.00 lemon grass — stalks
30.00 ml fish sauce
15.00 ml sugar
15.00 ml lemon juice

Method:

Heat the water and chicken breasts in a saucepan. Remove the chicken after 6 minutes, and slice.
Add the garlic, chilli, spring onions (cut into 4 cm pieces), lime leaves and lemon grass (cut into 5 cm pieces) to the water and bring to the boil add the chicken, fish sauce and sugar and boil for 1 minute.
Remove from the heat, stir in the lemon juice, garnish with fresh coriander and serve immediately.
