Tom Kha Gai chicken soup

  • 750
    good quality chicken stock
  • 1
    big chicken breast on the bone
  • 5
    thick slices galangal or fresh ginger
  • 1
    fat clove garlic - chopped
  • a bunch of coriander roots or stems - bruised
  • 4
    kaffir lime leaves
  • 2
    spring onions - finely sliced
  • 2
    tomatoes, seeds removed and cut into bite size pieces
  • 1
    tin coconut milk
  • 125
    button mushrooms - quarted
  • juice and zest of 3 juicy limes
  • 3-4
    fish sauce
  • 1
    red chilli paste
  • 2
    green chillies - seeds removed and chopped
  • handful coriander leaves - roughly chopped


Bring the stock to the boil and poach the chicken for 15 minutes. Remove and set aside to cool.

Add the galangal, garlic, coriander, lime leaves, lemongrass, spring onions and tomato. Simmer for 15 minutes.

Meanwhile, remove the chicken off the bone and discard the skin. Shred the chicken.

Add the coconut milk, mushrooms, lime juice, fish sauce, chilli and the chicken and simmer for another 10 minutes.

Season to taste with more fish sauce or lime and add coriander just before serving.
