Toasted cheese and tomato

    French bread or wholewheat bread
  • 160
    smooth low-fat cottage cheese
  • 1
    clove garlic, crushed
  • fresh basil leaves or dried basil
  • 1
    large tomato, sliced
  • salt and black pepper
  • 20
    olive oil (optional)


Place bread in the oven preheated to 180 ºC (350 ºF) for about 15 minutes or until the bread is golden brown and crisp. (Or toast the bread in your toaster). Blend the garlic and cottage cheese and spread over each slice of toast. Top with fresh basil leaves, or sprinkle with a little dried basil. Arrange the tomato slices on each slice of toast. Season lightly with salt and pepper and drizzle a little olive oil over each slice. Grill until the tomato slices just begin to brown. Serve immediately. Serves 4.
