Ingredients (8)

8.00 tortillas
4.00 red pepper — roasted, sliced
500.00 ml baby spinach
12.00 fresh basil
125.00 ml coriander
12.00 olives — mashed
200.00 g mozzarella cheese — grated
60.00 ml olive oil — to brush

Method:

Layer the ingredients onto
4 tortillas. Top with the
remaining tortillas and brush
with oil.

Heat a non-stick
pan over medium heat and
cook each side until golden
brown and the cheese has
melted.

Cut into quarters and
serve straight away.
