Ingredients (11)

12.00 crusty Italian bread — slices
100.00 ml fresh chillies — 573
6.00 garlic — large cloves, chopped
2.00 tomatoes — medium
5.00 ml sugar
salt and freshly ground black pepper
1.00 red onion — sliced
12.00 olives — black, pitted, chopped
1.00 rocket — bunch
6.00 pimento peppers — marinated or red bell peppers, halved
lemon juice — dash

Method:

Brush bread with olive oil and sprinkle with chopped garlic. Toast lightly on both sides. Cool.
Layer tomato on 6 slices. Sprinkle with sugar, salt and pepper. Cover with onion, chopped olives, rocket leaves and pimento or sweet pepper.
Sprinkle lemon juice over and add more rocket leaves.
Cover with remaining slices of toasted bread. Press down lightly and serve.
