Toasted Italian bread

    slices crusty Italian bread
  • 100
    olive oil
  • 6
    fat cloves garlic, chopped
  • 2
    medium ripe tomatoes
  • 5
  • salt and milled black pepper
  • 1
    red onion, sliced
  • 12
    stoned black olives, chopped
  • 1
    bunch rocket leaves
  • 6
    marinated pimento or red sweet pepper halves
  • dash lemon juice


Brush bread with olive oil and sprinkle with chopped garlic. Toast lightly on both sides. Cool. Layer tomato on 6 slices. Sprinkle with sugar, salt and pepper. Cover with onion, chopped olives, rocket leaves and pimento or sweet pepper. Sprinkle lemon juice over and add more rocket leaves. Cover with remaining slices of toasted bread. Press down lightly and serve.
