500.00 g sausages — beef or pork
BATTER
175.00 g flour
salt — pinch
2.00 eggs
300.00 ml milk
300.00 ml water
15.00 ml oil

Method:

BATTER: Place the flour and salt in a mixing bowl. Make a well in the centre of the flour and break in the eggs.
Beat to combine and the gradually add the milk and water to make a smooth, creamy batter.
Beat well and leave to stand for one hour.
Heat the dripping or oil in a pan and brown the sausages on all sides.
Pour the fat and sausages into a 30 cm square or equivalent size oval roasting pan or dish.
Place in the preheated 220 °C oven to heat through.
Remove dish from oven and pour in the batter. Place in oven and turn to 190°C when the batter has puffed and turned golden brown.
Cook for 35 to 40 minutes altogether.
