Toad in the hole

    Tbsp olive oil

    good-quality lamb bangers

    cup flour, sifted
  • 2
    eggs, slightly beaten

  • onion marmalade
  • blanched green beans


Turn the oven up to 220° C. Heat the olive oil in a baking dish, add the sausages and bake for about 15 minutes or until browned and cooked through. In the meantime, make the batter by whisking the cup of flour and the eggs in a bowl. Slowly add the milk and water, whisking until it forms a smooth batter. (This could also be done in a food processor). Season well. Remove the baking dish from the oven and, working quickly while the dish is still hot, pour in the batter. Bake at 220° C for 25 minutes or until puffed up and golden. Serve immediately with onion marmalade, green beans and perhaps cauliflower cheese.
