Tiramisu cups

Time 10 minutes, plus 2 hours chilling time

    dark chocolate, melted
  • 2
    large egg yolks
  • 15
    castor sugar
  • 45

    vanilla essence
  • 175
    mascarpone cheese
  • 15
    instant Nescafé coffee
  • 4
    sponge fingers
  • cocoa for dusting


Brush the inside of 16 paper cases with melted chocolate. Set in the fridge. Melt remaining chocolate again and coat the cups with another layer of chocolate. Chill until set, then carefully peel the paper cases away from the set chocolate. Whisk yolks and sugar together for 1 minute, then add half the brandy, vanilla essence and mascarpone cheese and whisk until combined. Dissolve coffee in 45 ml hot water and stir in remaining brandy. Crush the sponge fingers and stir into coffee mixture. Spoon a little into base of chocolate cases. Top up with tiramisu mixture and chill for 2 hours. Dust with cocoa and serve.
