6.00 eggs
90.00 g white sugar
500.00 g cottage cheese — creamed
250.00 g sponge finger biscuits
250.00 ml nescafé strong black coffee — cold
15.00 ml sherry — medium cream
45.00 g cocoa powder

Method:

Whisk egg yolks and sugar until thick and creamy.
Add cream cheese, mixing carefully.
Combine black coffee and sherry and dip the finger biscuits in the liquid.
Use half the biscuits to line the base of an 8 cm deep serving dish (preferably glass) with a diameter of 22 cm.
Whisk egg whites until stiff but not dry, then fold in the cream cheese mixture.
Layer half the cream cheese mixture over the biscuit base, then layer the rest if the biscuits and finally the remaining cream cheese mixture.
Refrigerate for about 6 hours. Sift cocoa over the entire pudding 1-2 hours before serving. Refrigerate.
