Tiger prawns and aioli

  • 16
    large tiger prawns, cleaned
  • olive oil and butter for frying
  • 2
    egg yolks
  • 1
    whole egg
  • 2
    garlic cloves
  • 2
    red chillies
  • 1
    ground coriander
  • 30
    white wine vinegar
  • 30
    lemon juice
  • 1
    lemon, the zest
  • salt and pepper to taste


Heat a large frying pan. Add oil and butter until it foams.
Add prawns and cook for one minute on either side.
Place the rest of the ingredients in a blender and mix to make the sauce.
The consistency should be of mayonnaise.
Serve with French fries and a moderate amount of aioli sauce.
