Three-milk sponge pudding

Imagine a malva pudding soaked in condensed milk.

Ingredients (9)

180 g butter — softened
1 cup castor sugar
2 Tbs vanilla
5 eggs
1 1/2 cup flour — self-raising
2 cup milk
1 cup condensed milk
1 cup evaporated milk
cream — or ice cream, to serve

Method:

Preheat the oven to 180ºC.

Cream the butter and sugar until soft and fluffy.

Add 1 tbsp of the vanilla and beat to combine then gradually add the eggs, one at a time, beating well after each addition.

Gradually add the flour and beat until combined.

Spoon the batter into a greased 20x30cm baking tin or oven-proof dish and bake for 30-35 minutes or until a skewer comes out clean.

In the meantime, place the milk, condensed milk, and evaporated milk and remaining 1 tbsp vanilla in a saucepan and heat gently.

Remove the pudding from the oven and poke it while still hot with the skewer all over to make holes. Pour the warm three-milk sauce over and serve with cream or ice cream.
