Ingredients (12)

250.00 g bacon — cut into pieces
2.00 onion — finely chopped
2.00 garlic — cloves, crushed
3.00 courgettes — sliced into rings
2.00 carrots — scraped and sliced into rings
4.00 tomatoes — peeled and finely chopped
500.00 ml stock — chicken
2.00 ml dried basil
2.00 ml dried thyme
410.00 g beans in tomato sauce
410.00 g green beans — drained if desired
410.00 g butter beans

Method:

Fry the bacon in a large saucepan until done. Add the onions, garlic, courgettes and carrots and sauté until glossy. Add the tomatoes and simmer until juicy. Add the remaining ingredients and simmer until a flavoursome soup is formed. Serve with fresh bread. Serves 4-6.
