The perfect steak

  • Spice mixture
  • coarse black pepper (50%)
  • sea salt (25%)
  • mustard seeds (25%)
  • 1
    grain-fed, mature rump steaks (cut into 4 steaks)
  • olive oil
  • olive oil spray


Grind together pepper, sea salt and mustard seeds to make spice mix.
Spray a heavy-based griddle pan with olive oil and heat until smoking.
Oil steak and grab with tongs to hold in place.
Turn on its side and brown fat until golden and crisp (two to three minutes).
Lay meat in pan, cook without moving for two minutes, turn and cook for a further two minutes, for a rare steak.
Season with spice mix and remove to plates.
Allow steak to rest for two minutes and serve.
