Method:

Fill the kettle with fresh cold water ? hot or reheated water is less aerated and has a flat or stale taste.
Rinse the pot with hot water to warm it – a warm teapot will ensure that the boiling water doesn’t lose heat rapidly when it touches the tea.
Add one teaspoon tea leaves or one teabag per person and one for the pot – that’s one teaspoon to approximately 185 ml water.
Pour boiling water into the pot, replace the lid and leave the tea to infuse for three to five minutes.
Serve only freshly made tea – it will have a ‘stewed’ taste if left to stand for too long. A tea cosy hastens this ‘stewing’ process, so avoid using one.
