Ingredients (6)

6.00 baby potatoes
1.00 red pepper
4.00 bacon — lean, sliced
4.00 eggs — beaten
0.00 fresh chillies — 573
0.00 salt and freshly ground black pepper

Method:

Preheat grill.
Boil or microwave potatoes until tender.
Halve or slice into thirds depending on size.
Chop pepper into chunks and chop bacon.
Heat a little olive oil in a smallish non-stick pan.
Add pepper and sauté for 3 minutes.
Add potatoes and bacon and cook for 5 minutes.
Season to taste.
Add beaten egg, cook over a medium heat, agitating the mixture from time to time.
When the egg has just set, about 3 minutes, place the pan under the grill, don’t close the oven door unless your pan doesn’t have a plastic handle!
Cook until set, about 2 minutes.
