The best lunch hour sandwich

    slices of seed loaf or health bread
  • 3-4 small aubergines, sliced and roasted
  • 1
    wedge brie cheese, sliced
  • generous handful fresh basil


Spread hummus on the bread.
Arrange the aubergines and brie on half of the buttered slices and top with a layer of basil. Then close the sandwich with the remaining slices. Cut in half and serve.
