Ingredients (10)

65.00 g flour — cake
2.00 ml Baking powder
1.00 eggs — beaten
15.00 ml fish sauce
15.00 ml lemon juice — or fresh lime juice
10.00 ml chilli sauce
150.00 g crab — or tuna
15.00 ml fresh coriander — chopped
salt and freshly ground black pepper
30.00 ml sunflower oil — for frying

Method:

Place all ingredients, except oil, in a bowl. Mix well.
Heat oil in a frying pan until hot but not smoking. Drop heaped tablespoonfuls of mixture into oil.
Fry for 1 minute on each side, or until golden. Drain on absorbent paper and keep warm in a hot oven while frying remaining cakes.
Serve with pesto rice.
