Thai meatball skewers

  • 0.5 small onion, finely chopped or grated
  • 5ml fresh crushed garlic and ginger mix
  • Freshly ground mixed peppercorns to taste
  • 10ml fish sauce or soya sauce
  • 10ml soft brown sugar
  • 90ml fresh coriander leaves, chopped
  • 350g extra lean beef mince
  • 1
    small pineapple
  • 1
    cucumber, cut into 2 cm slices


1. Preheat the oven to 200'C and lightly grease an ovenproof dish with non-stick cooking spray.
2. Mix the chopped onions, garlic and ground ginger, ground peppercorns, fish sauce, sugar and coriander in a bowl.
3. Add the mince and mix well, ensuring that all the ingredients are well mixed into the meat.
4. Using one heaped teaspoon at a time, roll the mixture into 30 small balls. Place the mini meatballs onto the lightly greased dish and bake for 20 minutes until brown and cooked through.
5. Thread two meatballs onto each skewer with cucumber and pineapple pieces.
