Ingredients (13)

250.00 g noodles — rice
60.00 ml oil
1.00 eggs
8.00 spring onions — thickly chopped
3.00 celery stalks — sliced
12.00 prawns — cooked and peeled
10.00 ml sugar
30.00 ml fish sauce
15.00 ml soy sauce
15.00 ml oyster sauce
25.00 ml fresh coriander — chopped
10.00 ml tamarind — soaked in water
30.00 ml peanuts — chopped

Method:

Soak dried rice sticks in cold water for 20 minutes. Drain and dry.
Heat oil in a wok or heavy-based saucepan, break in egg and mix roughly. Add rice sticks and all remaining ingredients and stir-fry for 3 to 5 minutes. They will be ‘bouncy’ when ready.
Decorate with fresh coriander.
