SALAD DRESSING
50.00 ml vinegar — apple cider
100.00 ml fresh chillies — 573
25.00 ml sesame oil
20.00 ml soy sauce
5.00 ml brown sugar — soft
10.00 ml fresh ginger — grated
2.00 ml dried crushed chillies — deseeded and chopped
10.00 ml peanuts — chopped
0.00 lettuce
1.00 chicken breast fillets — grilled or fried
0.00 lettuce — shredded
0.00 cabbage — shredded
4.00 onion — cut into rings
1.00 carrots — grated
0.00 mixed bean sprouts — handful
1.00 spring onions — finely chopped
10.00 ml sesame seeds

Method:

Blend all the ingredients for the salad dressing in a food processor or blender until smooth. Chill until seeded.
Chill the chicken fillet slightly before cutting into cubes. Mix with the remaining salad ingredients in a mixing bowl.
Moisten with the salad dressing and serve as a light meal.
