Ingredients (9)

1.00 kg chicken mince
250.00 ml breadcrumbs — fresh
4.00 spring onions — sliced
250.00 ml fresh coriander — chopped
20.00 ml coriander — ground
60.00 ml sweet chilli sauce
30.00 ml lemon juice
0.00 salt and freshly ground black pepper — to taste
40.00 ml oil

Method:

Preheat the oven to 200 &degC.
Mix the chicken mince and breadcrumbs in a large bowl.
Add the spring onions, fresh and ground coriander, sweet chilli sauce, lemon juice, salt and pepper and mix well.
With moist hands form the mixture into equal-sized balls.
Heat the oil in a large, non-stick pan and fry the balls over high heat until browned all over.
Drain on paper towels, place on a baking sheet and bake for five minutes or until done.
Nutrition per serving: Protein 40 g; fat 8 g; carbohydrate 10 g; fibre 1 g; cholesterol 85 mg; 1 160 kilojoules (275 calories).
