Thai chicken

  • 4
    chicken breasts
  • 2
    cloves garlic, crushed
  • large handful parsley, preferably flat leaf, chopped
  • 15
    chopped fresh mint
  • 10
    ground cumin (jeera)
  • 10
    ground coriander
  • 1
    red chilli, seeded and chopped
  • 1
    lemon, juice and rind
  • 10
    soft brown sugar
  • 250
    coconut milk
  • 10
    coarse salt


Make 3-4 incisions in each chicken breast and place in a shallow dish. Process the remaining ingredients in a food processor until smooth and pour over the chicken breasts. Roll each piece in the marinade, cover and marinate for at least one hour. Preheat the oven grill until hot. Remove the chicken breasts from the marinade, place on a baking sheet skin side up, and grill for about 8 to 10 minutes until golden brown. Turn, brush with a little of the marinade and grill for 6 to 8 minutes or until cooked and juicy. Serve with lemon slices, white parsley rice and a salad.
