Ingredients (11)

4.00 chicken breast fillets
2.00 garlic — cloves, crushed
parsley — flat leaf, chopped
15.00 ml fresh mint — chopped
10.00 ml cumin — ground
10.00 ml coriander — ground
1.00 red chilli — deseeded and chopped
1.00 lemon — zest and juice
10.00 ml brown sugar — soft
250.00 ml coconut milk
10.00 ml sea salt

Method:

Make 3-4 incisions in each chicken breast and place in a shallow dish.
Process the remaining ingredients in a food processor until smooth and pour over the chicken breasts. Roll each piece in the marinade, cover and marinate for at least one hour.
Preheat the oven grill until hot. Remove the chicken breasts from the marinade, place on a baking sheet skin side up, and grill for about 8 to 10 minutes until golden brown. Turn, brush with a little of the marinade and grill for 6 to 8 minutes or until cooked and juicy.
Serve with lemon slices, white parsley rice and a salad.
