Ingredients (10)

220.00 g cottage cheese — smooth
120.00 g caramel brown sugar
3.00 eggs — extra-large
75.00 g flour — self-raising
150.00 g tennis biscuits — crushed
75.00 g walnuts — coarsely chopped
50.00 g mixed citrus peel
5.00 ml Baking powder
2.00 ml mixed spice — ground
2.00 ml salt

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 23 x 13 x 7 cm bread tin with margarine or spray with non-stick spray. Cream the cottage cheese and brown sugar. Beat each egg before adding to the cottage cheese mixture, one at a time. Add a spoonful of self-raising flour after each addition and mix well. Add the Tennis biscuits, walnuts and mixed peel and mix. Sift the remaining self-raising flour, baking powder, mixed spice and salt together and fold into the mixture. Spoon the mixture into the greased tin and bake for 50-60 minutes or until the bread is brown and a testing skewer comes out clean when inserted into the centre of the loaf. Cool about 5 minutes in the tin before turning the loaf out on a cooling rack. Serve hot with butter.
Makes a medium loaf.
