Tasty spaghetti

  • 500
  • oil for frying
  • 8
    pork sausages
  • 2
    onions, finely chopped
  • 6
    carrots, scraped and cut into thin strips
  • 410
    Indian-style tomatoes
  • salt and freshly ground black pepper

Cook the spaghetti in rapidly boiling salted water until just tender. Drain and set aside. Heat the oil in a heavy-based pan and fry the sausages until brown. Remove, cut into slices and set aside. Fry the onions until tender, add the carrots and stir-fry until just tender, but still crisp. Add the sausages and tomatoes and simmer until heated through. Season with salt and black pepper to taste. Serve with the spaghetti. Serves 4-6.
