Tasty pork stir-fry

    olive oil

    pork strips, cut from the leg or fillet

    onion, thinly sliced
  • 2
    cloves garlic, crushed
  • 3
    large carrots, scraped and sliced into strips

    fresh button mushrooms, sliced

    courgettes, sliced
  • 15
    soy sauce
  • 10

    soft brown sugar

    cornflour, mixed to a smooth paste with a little water
  • salt and black pepper to taste

    cooked brown rice


Heat the oil in a large pan and brown the pork strips. Remove from the pan. Sauté the onion and garlic until soft, return the pork strips to the pan and add the carrots, mushrooms and courgettes. Sauté for 5-7 minutes over moderate heat until just done. Add a little boiling water if the pan becomes too dry. Mix the soy sauce, sherry, brown sugar and cornflour paste and add. Stir until the sauce thickens slightly and is cooked through. Add the rice if desired. Stir-fry until heated through and serve with rolls or pita bread. Serves 4-6.
