Ingredients (11)

MARINADE
250.00 ml stock — beef
90.00 ml soy sauce
90.00 ml lemon juice
60.00 ml honey
15.00 ml vinegar — white garpe
10.00 ml ginger — ground
10.00 ml cumin — ground
KEBABS
800.00 g mutton — leg, cubed
200.00 g prunes — stoned
24.00 peaches — dried
2.00 green pepper — cubed

Method:

Turn on the oven grill. Blend all ingredients for the marinade. Thread about 8 kebab skewers with the cubed mutton, prunes, peaches and green pepper squares and arrange in a large oven dish. Pour over the marinade and leave for 2-3 hours. Arrange the kebabs on the rack of the oven roasting tin and place under the grill. Grill for about 15-20 minutes until the meat is done, but not dried out. Baste regularly with the marinade, turning the kebabs once or twice during the cooking period. Alternatively, grill the kebabs over a medium hot fire. Serve with almond rice.
Makes 8 kebabs.
