Tasty fish bake

    fish fillets
  • 30
    lemon juice
  • salt and freshly ground black pepper
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and diced
  • oil
  • 3
    ripe tomatoes, peeled and finely chopped
  • 15
    parsley, finely chopped
  • pinch sugar

    Cheddar cheese, grated

Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray. Arrange the fillets in the oven dish. Pour over the lemon juice and season with salt and pepper to taste. Sauté the onion and green pepper in a little oil until soft. Add the tomato and parsley, mix and season with salt, pepper and a pinch of sugar. Spoon over the fish and sprinkle with cheese. Cover with aluminium foil and bake for 30 minutes or until the fish is done and flakes easily with a fork. Serve with slices of lemon and potato chips if desired. Serves 3-4.
