    fresh black mushrooms, thickly sliced

    butter for frying

    cake flour

    mustard powder

    crushed garlic

    sprigs French tarragon
  • 15
    ml
    thinly sliced lemon peel
  • salt and milled black pepper to taste
  • 125
    ml
    stock (juices from baked red steenbras)
 

Method

 
Sauté mushrooms in butter. Sprinkle with remaining ingredients, except stock. Add stock, stirring gently, and cook for a further 2 to 3 minutes. Served with baked red steenbras (see recipe). TOTAL KILOJOULE COUNT: 7 075 kJ (1 690 Cal). A portion: 1 415 kJ (340 Cal).
