Tarragon butter

  • 125
    g
    unsalted butter
  • 60
    g
    fresh tarragon, finely chopped
  • lemon juice to taste
  • salt and freshly ground black pepper
 

Method

 
1. Leave butter out of fridge overnight, to soften. Place in a small mixing bowl and beat in the tarragon, lemon juice and seasoning. Mix very well. Place on a piece of greaseproof paper and shape with a palette knife. Roll up into a cigar shape and freeze until required. Slice as needed.
