Ingredients (8)

250.00 g fish roe — smoked
2.00 bread — white slices, crusts removed
milk
2.00 garlic — large cloves, crushed
25.00 ml lemon juice
75.00 ml vegetable oil
100.00 ml fresh chillies — 573
salt and freshly ground black pepper

Method:

1. Purée the roe in a processor or liquidiser. Soak bread in milk to cover for 15 minutes. Squeeze all the milk from the bread and add to roe. Add garlic and process.
2. With the machine running, add a few drops of lemon juice and oil alternately until well incorporated. Add the olive oil in a thin stream. Taste and season with salt and pepper. Spoon into small bowls and serve as a dip or with pita breads.
Makes 500 ml.
