Ingredients (14)

SAUCE
2.00 onions — large
2.00 carrots — large
2.00 celery stalks
100.00 g butter
250.00 ml wine — white
400.00 g mince
400.00 g tinned tomatoes — crushed
250.00 ml milk
salt and freshly ground black pepper

50.00 g salt
500.00 g pasta — tagliatelle
50.00 g parmesan cheese — freshly grated

Method:

SAUCE: Chop onions, carrots and celery very finely. Fry slowly in 50 g butter, add white wine and cook until vegetables are tender and wine evaporated.
Add meat (made up of one third each beef, pork and veal) and cook for 3 to 5 minutes. Pour in tomatoes and milk, and simmer for about 40 minutes. Adjust seasoning.
PASTA: Bring water and salt to a rapid boil, cook noodles to manufacturer’s instructions, until al dente. Drain.
Place half the sauce, the Parmesan cheese and remaining butter in serving dish. Pour hot noodles on top, add remaining sauce and toss well. Serve immediately.
