Ingredients (9)

500.00 g sweet potatoes
100.00 g butter
250.00 ml water
90.00 g brown sugar
30.00 ml sherry — dry
125.00 ml maple syrup
1.00 orange — zest and juice
2.00 cinnamon — stick
3.00 ml salt

Method:

1. Peel and slice potatoes, place in a pot of boiling water and cook until just tender.
2. Heat remaining ingredients in a heavy-based pan until dissolved, bring to the boil for 1 minute.
3. Arrange potatoes in an ovenproof dish and pour syrup over, sprinkle with brown sugar and cinnamon and bake for 10 minutes or until top is brown.
