Swiss or cooked meringue

  • 4
    large egg whites, at room temperature
  • 200
    castor sugar
  • 5
    vanilla essence


Whisk all ingredients for 1 minute. Then place bowl over a saucepan of simmering water and whisk for 10-15 minutes until mixture is thick and forms stiff peaks. Remove from heat and continue to beat until cool.
