Ingredients (5)

500 g fish — red roman, cob or yellowtail, halved lengthways
2 tsp fish spice
1 pinch black pepper — freshly ground
2 tbsp butter — melted
2 tbsp jam — apricot

Method:

1. Make a “dish” to cook the fish in, using aluminium foil, and place the fish in it.
2. Sprinkle the fish with the spice and pepper to taste, place in a portable grill and close. Place the grill onto the braai, so that the fish is exposed to the coals and the foil dish is on top. Braai over the coals for 2 to 5 minutes.
3. Meanwhile, mix the melted butter and apricot jam.
4. Take the grill off the coals and open up, with the foil at the bottom.
5. Drizzle the butter and apricot sauce over the fish.
6. Return to the coals with the foil dish at the bottom. Grill until the sauce bubbles.
