Sweetcorn bite

  • 4
  • salt and pepper to taste
  • 4
    slices bread
  • butter or margarine for frying
  • 420
    creamed sweetcorn
  • grated cheese


Beat the eggs in a shallow container and season with salt and pepper. Dip a slice of bread in the egg mixture and allow it to soak slightly. Melt the butter or margarine in a frying pan over moderate heat. Fry the egg-covered bread until slightly brown on either side and dry in the middle. Keep the slice warm and do the same to the remaining slices of bread. Heat the sweetcorn until hot. Spoon it over the hot slices of fried bread. Sprinkle cheese on top. Grill the slices under the hot element at the top of the oven until the cheese has melted. Serve immediately with a salad.
