Sweet rice fritters

    Van der Hum (or other orange-flavoured) liqueur
  • sunflower oil, for frying
  • jam, to serve

Put rice, milk and salt in a large pan and simmer gently for 15 minutes. Add sugar, butter and orange zest. Continue cooking until rice is very tender and milk has been absorbed. Remove from heat and cool. Beat in egg yolks, followed by flour and finally, Van der Hum. Just before frying, whisk egg whites stiffly and fold them into rice mixture. Pour 1 cm oil into a frying pan and heat over medium heat. Drop in tablespoonfuls of mixture, flatten slightly and fry on both sides until golden brown. Drain on paper towel and serve immediately, accompanied by jam or dusted with extra sugar. Serves 4-6.
