Sweet potato and snoek salad

  • 500
    flaked and boned smoked snoek
  • 125
    readymade mustard dressing or good quality full oil French dressing
  • 3
    medium sweet potatoes, peeled and cubed
  • seasoned sea salt to taste
  • 1
    butter lettuce
  • 125
    thinly sliced spring onion, with green tops


1. Place the sweet potatoes in a mixing bowl and toss with just enough mustard dressing to coat. Season with sea salt. Arrange in a single layer in an oven pan. Bake in a preheated 200 ºC oven for about 30 minutes, until golden brown. Allow to cool. 2. Line a flat platter with butter lettuce. Top with a layer of smoked snoek, add the roasted sweet potatoes and spring onions. Top with a little more dressing. Garnish with dehydrated oriental seaweed, rehydrated in water (optional). 3. Serve with Cape-style wholewheat bread and well-ripened brie cheese if something more substantial is required. Fresh fruit rounds off this healthy meal. Serves 4.
