1.00 kg sweet potato — washed and cut into chips
0.00 fresh thyme
0.00 fresh rosemary — sprig
6.00 garlic — whole cloves
0.00 fresh chillies — 573
0.00 salt
0.00 black pepper — freshly ground
0.00 brown sugar
250.00 g brie cheese
10.00 shortcrust pastry — cases
4.00 eggs
60.00 ml cream

Method:

Preheat oven to 180 &degC.
Place sweet potato chips, thyme, rosemary and garlic in a roasting tin in a thin layer.
Sprinkle with olive oil, salt and pepper and mix.
Sprinkle with brown sugar and bake for about 1 hour.
Place sweet potato strips and Brie slices in empty quiche cases.
Beat together eggs and cream.
Pour over and bake for 15 minutes or until set.
