Sweet potato and Brie quiche

  • 1
    sweet potato, washed and cut into chips
  • sprig of fresh thyme
  • sprig of rosemary
  • 6
    whole garlic cloves
  • olive oil
  • salt
  • freshly ground black pepper
  • brown sugar
  • 250
    Brie cheese
  • 10
    blind-baked quiche cases (individual portion or size of your choice)
  • 4
  • 60


Preheat oven to 180 °C.
Place sweet potato chips, thyme, rosemary and garlic in a roasting tin in a thin layer.
Sprinkle with olive oil, salt and pepper and mix.
Sprinkle with brown sugar and bake for about 1 hour.
Place sweet potato strips and Brie slices in empty quiche cases.
Beat together eggs and cream.
Pour over and bake for 15 minutes or until set.
