Sweet peppers: how to grill

  • sweet peppers (red, green or yellow)


Halve peppers, discard seeds. Flatten on a baking tray and grill peppers under a preheated grill until blackened and blistered. Place in a plastic bag until cool (they will sweat, making the skins easier to remove). Carefully strip off blackened skin. Cut flesh into thick strips. Use in mushroom and brinjal salad (see recipe).
