Sweet pâte brisée

  • 250
    cake flour
  • pinch salt
  • 60
    granulated sugar
  • 140

    lemon juice


Sift flour, salt and sugar onto a pastry board. Cut in butter, then rub in with fingertips until mixture resembles fine breadcrumbs, or mix in a food processor with a steel blade. Add lemon juice and process until dough begins to form a ball. Refrigerate for 30 minutes to chill, or prepare in advance and chill until needed. TOTAL KILOJOULE COUNT: 8 890 kJ (2 125 Cal). Makes enough to line a 25 cm flan pan
